Tasting notes

Varieties: 70% Cornicabra, 30% Picual. Color: Bright green. Nose: High (medium 6.1) and complex green fruitiness. Predominant aromas of freshly cut grass, olive leaf, and green tomato, with fruity notes of banana, apple, and nuts. Spicy background with cinnamon, tea, and aromatic herbs. Palate: Silky and elegant entry. Medium bitterness (4.5) well-balanced with a mild spiciness (3.7). Fluid texture, with a fresh and long aftertaste. A very harmonious extra virgin olive oil, ideal for enhancing delicate dishes. Perfect for gourmet cuisine: white fish, creams, warm salads, and fine pasta. Also excellent on toast with fresh tomato.
